Dear Max,
With distillation, the cafe scene, and the pretty purple vista
gone, its clean up time. We change into winter mode with emphasis on
our website, shop and plans for the next summer. Below is a good
insight of what goes on in March.

Fall heralds the closing of our cafe. Although we have a
coffee vending machine and cookies the throughput of customers
does not justify the cafe. We have a big party to say "Good
Bye" to the staff followed by a day or two of ferocious
cleaning up.
It is sad to farewell everyone as they have really become
family to us. Nevertheless off they go to school, university
or beyond. We wonder how many we will see back in spring and
what wonderful stories they will bring back with them.

This is a picture of our 100 sq metre marque which houses
our guests when they eat under cover. Up to now our staff had
to carry food and drinks from the food caravans to the marque.
It is quite a distance and very impractible. The caravans also
have their limits.
This year we are to build a 60 square metre professional
kitchen and wine cellar. This will allow us to cater for
weddings and conferences as well as deliver a higher quality
meal. All of the menu will have a lavender touch, from
lavender and orange zest biscotti with the coffee, through
lavender lamb on focaccia as a main to our popular lavender
marshmallow square to finish. All lavender cooking!!!

The shop is now enlarged to give Allan the whole barn to
house his products. Oil, health care goods, crockery, linen,
soaps, rubbings, cards, etc etc. Over 300 items to choose
from. Over the next two months Max will refresh the website,
particularly the picture gallery and the online shop.
Shop hours are 10am to 4pm Thursday to Monday (Allan has
Tuesday and Wednesday off). Do drop by for a coffee and chat.

The Trimming |

This is a picture of our gardner Rowan trimming the last of
our 80+ rows of grosso lavender. Our harvester cutter is set
lower and narrower than when it did the harvest proper.
The trim is to make the rows look presentable. The sides of
the rows are cleaned up by hand with a weed eater fitted with
a tungsten tipped circular blade. Just cleaning up the rows
