Dear Max,
We are just about to launch into our Spring Season. Lots of
things are happening but most are in the last stages of
implementation. Read on and see how we are coming along and what we
have in store for you.
We are doing a survey on lavender for not only us but the
Yahoo lavender chat group and the New Zealand Lavender Growers
Association. It is only six questions long please fill it out.....

| The New Lavender Beds |

Over the last season Liz has continued our replanting
regime with plantings of Foveaux Storm and Pacific Blue
lavenders. Of our approximate 100 rows of lavenders 6 rows
were replanted last year and a further 10 this year.
These new varieties of lavender will bloom earlier than our
Grosso (see they are already purple) and are culinary
lavenders and of use in the kitchen (to flavour food) and the
shop (to sell).
Don't forget that we have lots and lots of lavender plants
for sale in our nursery area adjacent to the knot garden,

Our wonderful new kitchen is almost finished. The plumbers
and electrican are doing their bit but the building, flooring
and cooking equipment are all in place.
Here is our plumber Carl squirrelling across the kitchen on
some connection job. We are all indebted to the tradesmen for
doing such a good job in such a short time

Meet our barista Lauren Sargisson in front of our new 3
group La Marzocco coffee machine, the best in the world. This
year our Bruno Rossi coffees will be even better than last
year.
Our maitre d' is Ian Bryant from the UK who has a GNVQ in
Leisure and Tourism. He is a great asset to Whitebay and such
a hit with those customers who have already visited.

This is a picture of Kate Harrington our summer chef on
loan from Jersey Lavender Limited. Whilst visiting Jersey Liz
and Max met Kate for about 20 seconds. That was enough to
offer her a position at Whitebay!
Kate has set Napier alight with her cooking ability,
professionalism and sweet nature. Several newspapers have
already interviewed Kate and those who have tried her lavender
cookery are full of sweeping compliments. See our provisional summer
